CAS: 9004-32-4 Sodium CMC, short for Sodium Carboxymethyl Cellulose ,also known as cellulose gum, is manufactured by the chemical synthesis of naturally derived cellulose with chloroacetic acid. The multifunctional aspects of this product make it favorable for use as a key intermediate or ingredient in several applications. Cellulose gum enhances the aesthetics of the finished product by imparting smooth texture and modifies the viscosity of various foods, personal care products, and pharmaceutical formulations. In food, pharmaceutical and cosmetic applications, highly purified types (99.5%+) are required and are referred to as cellulose gum. Technical grades (90-99.5%) are used in adhesives, coatings, pulp and paper, textiles and other industrial applications. Industrial (50-90%) grades of CMC, which contain large amounts of sodium chloride and sodium glycolate, are used in a number of detergent, mining and petroleum outlets. Commercial products come in some 500 different grades differing on impurity level, molecular weight, Food and Drug Agency regulation, degree of substitution (DS) and several other factors. The DS level can range from 0.4 to 1.4 but most products have a DS of 0.7. Viscosity ranges from 6000 centiPoise (cP) in 1% solution to 10 cP in 2% solution. About 28% of CMC is used in food and beverages, 14% in detergent/laundry applications, 11% in oilfield drilling fluids, 7% in coatings, 7% in drugs and toothpaste. Some 5% is used in cosmetic and personal care, 5% in pulp and paper, 4% in adhesives and 4% in textile, printing and dyeing. CMC powder is widely used in the ice cream industry, to make ice creams without churning or extreme low temperatures, thereby eliminating the need for the conventional churners or salt ice mixes.CMC is used in preparing bakery products such as bread and cake. The use of CMC gives the loaf a much improved quality at a reduced cost to the baker, by economizing on the fat component. CMC is also used as an emulsifier in high quality biscuits. By dispersing fat uniformly in the dough, it improves the release of the dough from the moulds and cutters, achieving well-shaped biscuits without any distorted edges. It can also help to reduce the amount of egg yolk or fat used in making the biscuits, thus achieving economy. Use of CMC in candy preparation ensures smooth dispersion in flavour oils, and improves texture and quality. CMC is used in chewing gums, margarines and peanut butter as an emulsifier. It is also used in leather crafting to burnish the edges.
